Hello beekeeper, The castings in the Aga hold their heat for a surprisingly long time due to the large amount of insulation with which the cooker is packed. The front and top plate will be cool to the touch after the Aga has been left switched off overnight with the lids and doors open with the two hotplates still gently warm in the morning. If however the pilot light is left lighted, the Boiling Plate will remain hot but touchable and the Simmering Plate warm indefinitely. Neither hotplates remain hot enough for any cooking process however.
