I’ve marinated two medium pork chops in Guinness for 4 hours. How long should I cook them for in the oven for? Should I cover them with tinfoil and what would be the best way to serve them?
To cook and colour the chops yet keep the flesh as moist as possible, line a roasting or baking tin with Bake-O-Glide or a double thickness of aluminium foil. Drain the chops and add to the lining, oiling the foil first if using this. Pour over enough of the Guinness to just cover the chops, and sprinkle a dessertspoon of Demerara sugar over each chop. 2, 3 and 4-Oven Aga Bake on a grid shelf on the floor of the roasting oven for 15-20 minutes, until the juices run clear. Conventional oven Bake in the centre of an oven pre-heated to 180°C/350°F/gas mark 4. Cook for 20-25 minutes, until the juices run clear.
While the chops are baking, boil the remaining Guinness in a pan until reduced to about half a cup and pour this over the chops five minutes before the end of cooking to give a rich-flavoured glaze.
