Cookery Doctor Richard MaggsCan you possibly help me? I have just seen an advert on the television where they added this creamy looking sauce to potatoes. It’s either cream or yoghurt and I think the name is something like "zackzehki". Have you ever heard of it? Could it be Greek?


I think the sauce you are after is Tzatziki, which is a Greek sauce taken from their Mezze tradition. It’s usually made using full-cream yoghurt which is first strained and then diced cucumber is added, sometimes with a little ingredient from the alium family, namely onion or garlic.

To prevent the cucumber making the sauce too watery, the cucumber is normally skinned and cut lengthways. The centre section is then gouged out using a teaspoon, and the watery seeds discarded. Then the flesh is chopped into dice about an eighth of an inch in size (3mm) and added to the yoghurt, with a little salt and ground white pepper.
 
In the UK, most of the supermarket versions are flavoured with mint, and sometimes a little green food colouring is added. For this reason, most people associate tzatziki with being mint in flavour, but this is in no way the norm in the Mediterranean. By all means experiment by adding a little chopped fresh mint, but do try it without as well.
