Sharpening Knives
 
Every kitchen deserves sharp knives. Mark David offers advice on how best to achieve a razor-sharp edge
 
 
 
Mark David finds the best way to sharpen a knife is not by using a traditional steel but by using a garden tool sharpener, like one used to sharpen shears.

Hold the stone at one end and lay the knife almost horizontal to it and bring the blade down the stone away from you, then do the same underneath to sharpen the other side. Do this a few times. on both sides, to get a really sharp finish to your knife blade.

Sharp knives are essential for cutting vegetables Julienne style. This is a French term for chopping vegetables into large matchstick sized pieces. The vegetables then cook quickly and are ideal for stir-fries or similar recipes.
