All of the Aga non-stick frying pan linings should be fine for flambe work. The temperature needed for burning off alcohol is considerably lower than the temperatures used for frying, as alcohol is so volatile. Get the pan good and hot, add your chosen spirit, then tilt the pan slightly and ignite with a match. Watch you don`t burn your hair as the flames burn with a blueish semi-invisible hue which is easy to miss.
Once the alcohol has burned off when you have flambeed your cooked steaks, transfer them to a warm platter whilst you finish making a simple sauce: deglaze the pan with a little stock or wine, and add enough double cream or creme fraiche to slacken into a sauce. Adjust the seasoning carefully, and finish with a little butter to monte the sauce. For game a little redcurrant jelly is a great improvement.
