Freezing fruit!

Question

Can you suggest a quick way to prepare blackcurrants & gooseberries for freezing ?

Answer

Richard responds:
If you are picking your own fruit, the quickest way of strigging them
(removing the currants from the stem) is by using a fork. I prefer to
collect my fruit, and then spend a happy hour in the garden with a sharp
pair of scissors to top and tail currants and gooseberries listening to
something decent on the radio. Enlist family help if you need to. Wash and dry carefully, if necessary. You can then either bag or box up in recipe-sized quantities and freeze as a block, or do what most people prefer, which is to tray up in a single layer on Swiss roll tins or similar, and open freeze. Once hard as bullets you can bag them up and enjoy the luxury of being able to select as much as you need from a free-flowing bag of frozen fruit.

I often make a large batch of gooseberry puree (sieved, lightly sweetened and flavoured with elderflowers when available) and freeze in pint quantities. The addition of equal quantities by volume of whipped double cream and thick custard make for a speedy gooseberry fool later in the year
