Butterflied Lamb in Lemon Marinade
Most supermarkets now sell butterfly cuts but if not ask your butter to bone out a leg of lamb to a butterfly cut. The advantage of this cut is that being thin and spread out it cooks quickly and therefore can be grilled, barbecued or roasted.
