Fat-free Fruit Loaf

 
Make this ahead and have it ready to provide the perfect start to the day
 
Fat-free Fruit LoafWhat do I need?
1 Darjeeling tea bag
300g soft dried fruit such as
apricots, prunes, apples etc.
175g soft brown sugar
2 medium eggs, beaten
225g wholemeal flour
1 tsp baking powder
1 tsp mixed spice
2 ripe bananas, sliced

How long will it take?
Preparation time: 5 minutes, plus soaking
Cooking time: 45 minutes
Makes: 10-12 slices

What do I do?
Grease and base line a 1kg loaf tin.
Soak the tea bag in 300ml boiling water for 5 minutes. Roughly chop the fruit and add to the tea,
discarding the tea bag and soak for 2-3 hours. Preheat the oven to 180°C, gas mark 4.
Mix in the sugar and eggs. Mix together the flour, baking powder and mixed spice and fold into the fruit mixture. Pour into the prepared tin and bake for 45 minutes or until firm to touch
and a skewer comes out clean. Allow to cool slightly before slicing.
Serve with sliced bananas.

Aga method
2 oven Aga: bake in the roasting oven on the grid shelf on the floor of the oven, with the cold plain shelf on the second set of runners for about 40 minutes.
3- and 4-oven Aga: cook in the centre of the baking oven for about 45 minutes.
