Fish Gratin
(Serves 4)

Fish Gratin: delicious served with rice

What do I need?

1 tsp oil
400g fillets of fish (white fish such as haddock or cod)
Salt and pepper
2-3 carrots
150g celeriac
200g of courgettes
1 onion
1-2 tsp curry powder
1 tbsp flour
200ml water
50g cream cheese (optional)
# tsp Fruisana Fruit Sugar
75g grated cheese (optional)

What do I do?
Preheat the oven to 200°C/ gas mark 6/ 400°F.

Meanwhile, lightly grease a casserole dish with oil and place the fish on the bottom. Sprinkle with salt and pepper.

Peel all the vegetables, except the courgette. Slice the onion and coarsely grate the rest of the vegetables.

Dry fry them until they start to soften. Add the curry powder a little at a time mixing thoroughly.

Add the flour and stir in the vegetables. Pour in the water (if you are using cream cheese, add at this point). Season with salt and Fruisana.

Spread the vegetables evenly on top of the fish. Sprinkle with cheese (if using) and bake in the oven for 15-20 minutes or until golden.
