Jamaican Jerk Chicken (serves 4)

Jerk Chicken: Jamaican experience of natural herbs and spices | What do I need? 1 tbsp olive oil 1 onion, chopped 4 boneless, skinless chicken breasts 1 packet Schwartz Jamaican Jerk Chicken 1 green pepper, diced 3 tbsp tomato puree 75ml (3fl oz) water 425g tin pineapple chunks in natural juice
What do I do? Heat the olive oil in a deep frying pan and fry the onion gently for 1-2 minutes.
Add the chicken and cook for 2-3 minutes on each side.
Sprinkle in the packet contents, and then add the rest of the ingredients, including the pineapple juice, but reserving the pineapple chunks. Bring to the boil, stirring.
Cover the pan, turn down the heat and simmer gently for 15 minutes adding the pineapple chunks for the last 5 minutes.
