King Prawns Provencale

 
Johnny Cook, a waiter from the Loch Fyne restaurant in Gosforth, favours this prawn recipe
 
King Prawns Provencale
(Serves 4)

King prawns: enjoy these in a tomato sauce

What do I need?
1 tbsp olive oil
1 clove garlic, crushed
1 bunch salad onions, finely chopped (reserving some for garnish)
1 tbsp thyme, freshly chopped
1 tbsp sun dried tomato purée
400g can chopped plum tomatoes
3 tbsp Noilly Prat or dry white wine
5 king prawns per person

What do I do?
Heat the oil in a large frying pan or wok and stir in the garlic and onions. Stir-fry for 2-3 minutes.

Add the thyme, purée, tomatoes and Noilly Prat. Simmer stirring occasionally for 5-8 minutes.

Butterfly the king prawns from head to tail but without cutting all the way through, so that you remove digestive tract.

Stir the prawns into the tomato sauce and cook for a further 2-3 minutes.

Aga method
2, 3 and 4 oven Aga:
use the Aga wok to stir-fry on the boiling plate.
