Mexcian Mussels (Serves 2)

Mussels: do you like yours Mexican style too? | What do I need? 1 tbsp cooking oil Half red pepper Half onion 100ml Tequila 4 tbsp water Squeeze of lime juice Ground black pepper 20g jalapeno peppers 1kg fresh Loch Fyne mussels. Coriander, chopped
What do I do? Heat the oil over a medium heat, then cook the onion and red pepper for around 5 minutes.
Stir in the tequila, water, lime juice, ground pepper and jalapenos, and simmer before adding the mussels. Sprinkle over the coriander then cover and steam for 3-4 minutes.
