Mexican Mussels

 
Iain MacKay, a mussel farm manager, likes his mussels Mexican-style. Try this recipe from Loch Fyne.
 
Mexcian Mussels
(Serves 2)

Mussels: do you like yours Mexican style too?

What do I need?
1 tbsp cooking oil
Half red pepper
Half onion
100ml Tequila
4 tbsp water
Squeeze of lime juice
Ground black pepper
20g jalapeno peppers
1kg fresh Loch Fyne mussels.
Coriander, chopped

What do I do?
Heat the oil over a medium heat, then cook the onion and red pepper for around 5 minutes.

Stir in the tequila, water, lime juice, ground pepper and jalapenos, and simmer before adding the mussels. Sprinkle over the coriander then cover and steam for 3-4 minutes.

Aga method
2, 3 and 4 oven Aga:
Cook on the hotplates.
